Misir Wot - Ethiopian Red Lentil Stew

  • Add 3 cups of water and bring to a boil.
  • Add 1 cup of Guada Kulate and cook until rehydrated (5-10 minutes).
  • Stir in 1 tsp of salt and 1 cup of oil.
  • Add 2 cups of red lentils.
  • Cook while continuously stirring and adding water as necessary to achieve your desired consistency, or until the lentils have cooked through.
  • Season to taste (optional). Serve hot with Injera. Enjoy!

Doro Wot with Guada Kulate

  • Add 2 liters of water and bring to a boil.
  • Add 1 bag of Guada Kulate (250g) and let rehydrate while stirring occasionally.
  • Add 1 cup of Berbere (optional). Cook for 5 minutes.
  • Stir in 1 cup of oil of your choice. Cook for 5 minutes.
  • Add 1 tsp Mekelesha (spice mix), 1 tsp Korerima (black cardamom), and 2 tsp of salt (or to taste).
  • Add one whole chicken cut into 12 pieces, stirring occasionally. (For a vegan option, use Tempeh, plant-based chicken, or your choice of vegan protein.) Cook for about 10-20 minutes until the chicken or protein is cooked through.
  • Add 3 TBSP of spiced Ethiopian butter (optional).
  • Add 8-10 hard-boiled eggs (optional).
  • Serve hot with Injera or your choice of flatbread.

Firfir

  • Add 2 cups of water to a pot and bring to a boil.
  • Add 1 cup of Guada Kulate and cook until rehydrated (5-10 minutes).
  • Stir in 1/2 cup of oil and 1 tsp of salt.
  • Add 1/2 cup of Berbere to make it extra spicy (optional).
  • Add 1 peeled and chopped tomato.
  • Pour in 1 cup of water and let it simmer.
  • Tear Injera into bite-sized pieces and mix it into the stew.
  • Add chopped green chili pepper as a topping.
